You just change the url in /opt/csw/etc/pkg-get.conf from unstable to stable.

E.g.

I use "url=http://mirrors.sunsite.dk/csw/unstable", if I wanted to use
the stable tree I would change it to
"url=http://mirrors.sunsite.dk/csw/stable"
